Yums

Sometimes I wake up, and I just start baking.

Before I make my tea, before I think about breakfast, definitely after I feed the cats (they do not allow any other tasks to be done) before most things, gluten-free flour is flying and I make a mess of the kitchen well before 8am.

Today, was one of those days.

I've had some zucchini from the farmers market that I've been waiting to use. I had a handful of pecans from Alabama.....

Voila! Gluten free & vegan zucchini nut muffins.
